Homemade Burger Buns

So I woke up this morning and I thought, "I'm going to make my own hamburger buns today." Random, I know. :) But I've always been really interested in making bread. Nothing tastes (or smells) better than fresh-baked bread. When Scot talks about his time in Germany, his fondest memories are eating bread just out of the oven at the local bakery. I did go through a bread machine phase a while back, and while I did like the bread that came out of the machine, it took up a lot of space in my teeny-tiny kitchen. So, I gave it away. But I never stopped dreaming **sigh** about fresh bread.

So, this morning I got up and I said, "I'm making buns." Next stop, is Breadtopia. An amazing site with recipes and videos all about making bread. So, I started. I mixed some milk, sugar, salt and butter (the recipe will be at the end) in a small saucepan and heated it on low to melt the butter. I weighed out the flour and I added the yeast to some lukewarm water and then mixed it all up in my stand mixer with the dough hook (it was very exciting to use the dough hook!) Then I put it in this beautiful, oiled bowl and let it rise for an hour.
(I downloaded the Hipstamatic app to my phone a few days ago and used it to take these photos. I think they're really fun! I need to check out some different film options for it.) After the dough was left to rise for an hour, I punched it down and used my kitchen shears to cut the dough into 2 1/2 ounce pieces for the buns. They're not perfectly round but they ended up being perfectly delish! I ended up with 8 rolls spaced out about 1" apart. The other two are on a separate baking sheet.
I brushed the buns with an egg wash and put them into a 400 degree oven for about 12 minutes.
The end result was bacon avocado cheese burger (bacon leftover from breakfast and avocado from the tree in the backyard) and oven roasted fries. My very picky husband said it was great! I'm very pleased with my first try at making my own hamburger buns.
Here's my recipe:

1/4 c whole milk

1 1/2 tbsp unsalted butter

1 tsp salt

1 1/2 tbsp sugar

2 1/4 tsp active yeast

3/4 c warm water (105-110 degrees)

2 1/2 c unbleached bread flour

1 egg white, room temperature with a splash of water

cornmeal for baking sheet

Heat first four ingredients in a small saucepan and heat until butter is melted and sugar dissolves. Cool to lukewarm (less than 110 degrees.)

Add warm water to bowl of stand mixer (or another large bowl if mixing by hand) and sprinkle yeast over and let sit for 10 minutes until bubbly. Add 2 1/4 c flour and lukewarm milk mixture to the yeasty water and mix on speed 2 for about a minute or two and then slowly add additional 1/4 cup flour and continue beating on speed 2 until dough starts to come together and starts cleaning the side of the bowl (about 2 more minutes.) Dough will be a bit sticky. Coat a glass bowl with oil (I sprayed mine with PAM cooking spray) and add dough, turning to coat with oil. Cover with plastic wrap and let rise until doubled, about an hour.

Punch dough down and divide into 8 equal portions, about 2 1/2 ounces each. Let rest 5 minutes and then flatten into a bun shape with the heel of your palm and place on baking sheet that is sprinkled with cornmeal. Let rise again until doubled in size, 45 minutes or so. Heat oven to 400 degrees. Brush egg wash over buns and bake until bread is 200 degrees inside, about 12 - 14 minutes. Cool on wire rack and try not to eat before the burgers are ready! Enjoy!

So, now I've entered a design contest. Am I nuts or what? I know I definitely will learn a lot and have some fun at the same time! The first challenge is to extract at least two elements from a photo or a scan. I haven't hooked up my new scanner yet so I opted for photos. I can't believe it's already April! Wow, this year is just flying by. In California we don't really have the defined 4 seasons that other places do but summer is my favorite season because I like it hot! We had a little taste of it last week when we got in to the 90s! It's been a while and it felt great! Well on to my new kit. B is for Bunny is a sweet little kit of soft shades of pink & blue with my little drawn bunny.

It's a nice combination of papers, both solids and patterns, and a couple ripped from the wire binder.

Cari's coming over for dinner tonight so we have a meatless menu. She loves Fontina cheese, so first is a baked pasta dish with fontina and mascarpone. It's guinea pig night (I've never made this recipe before) but I don't know how it won't be a big hit with her. Here's the recipe.

And I had 3 ripe bananas and one egg so this is what I made with it. I'm sending the leftover muffins home with her so she'll have some breakfast this week. I made these about an hour ago and they came out perfectly. My kitchen smells heavenly at the moment! Have a great week and thanks for stopping by.

Tangerine

Inspired by my winter crop (LOL!) here in my yard. My tangerine tree is loaded with fruit and I've been taking it to work the past few days and dosing everyone with organic vitamin C. And what is better than fresh, sweet tangerines? I want to take a moment here at the top of the page to thank Shauna Niequist for permission to use a quote from her book, "Cold Tangerines: Celebrating the Extraordinary Nature of Everyday Life". It's included in the add-on freebie that is farther down in the post.

Beef & Peas

If you're going to add any recipe to your rotation, this is it! It was so good and really easy to make. I made this last night (inspired by The Pioneer Woman's version-here) and it took about 15 minutes from start to finish. I served it over Jasmine rice (and I did leave out the green onions because I didn't have any.) I added the recipe to my online WW builder to calculate the points and it was 8 in the Points Plus plan ~ so reasonable that I ate the leftovers tonight. Delish!

It's that time of year when I must put a little note on my computer to check the date on every document I prepare because I will write 2010 until April if I don't! Wow! 2011. I hope it slows down and doesn't fly by as quickly as last year, well the first half can fly by and then let's slow down the second half. The first half still finds Josh in a war zone and I will rest easier when he & Peggy are home again. And I get to visit them in Germany this summer when they finish their deployment. I am so looking forward to that!

Resolutions? Well, I have my ongoing resolutions (along with the rest of the world) to lose weight and save money, but I'm going to listen to Dr. Phil this once and take this arbitrary day to think about what is really important and focus on that. I am going to be happy and I'm going to savor the little moments in life that slip by so quickly that if we don't will be gone from our memories. I'm going to pay it forward when I can and I think that will all be for the good for me. And of course I'm going to scrap and cook and read and watch movies and all the stuff that I enjoy so much! Yesterday, Scot & I went to the movies at 9:00 in the morning. We do like to beat the crowds LOL! We saw the new Coen Brothers movie, True Grit. It was really good; I recommend it highly. I only had to cover my eyes a couple of times at a bit of violence. You should see it.

Tonight for dinner, we are having Asian Pork Tenderloin, with Jasmine Rice, Spring Rolls, and Sugar Snap Peas. And for luck I'm going to make the Zannie's Black Eyed Peas dip that I got this morning here from the Pioneer Woman. Here's the recipe for the Asian Pork Tenderloin, but I haven't made a card for the dip yet. Go to the Pioneer Woman's site and you'll be hooked for sure. Happy New Year!

Well, Christmas 2010 is behind us and New Year 2011 is just around the corner. It came so quickly this year ~ I can hardly believe it. Josh & Peggy are still in Afghanistan and we missed them so much. Please keep them in your prayers. Cari made us gifts this year and I've begged her to make us gifts every year! She made this beautiful paper collage for Scot (he loves polar bears!) and she made me a series of line drawings that I'm going to be using in my scrapbooking this year. You'll probably see a few of them here as gifts for you. She is so talented (I am biased, but it is still a true statement!) Here is the desktop layout that I made for my computer.

A brand new picture of my little great-nephews & niece that begged to be scrapped! Arent' they the cutest you've ever seen! I miss these days from when my own kids were little. This time of year is just magical!

Domino has moved out!

Well, Cari is settling in to her new place and she came last week and picked up Domino. I was a little worried that she was going to be upset to move (Domino that is!) but you can see by these pics that she's definitely settling in nicely! Domino is a very funny cat. She doesn't like to be alone and no matter what room you're in she has to be there, too. Even if it's just to sleep. So Cari is a smart girl and got Domino this little portable bed that can be moved from room to room when Cari is painting or drawing. It lets Dom be nearby but not right in your lap! We miss you Cari & Domino! Visit soon!

Pumpkin French Toast

Well, I'm slowly getting better. I'm recovering from my surgery and my cold is slowly going away (thanks a bit to Aleve-D!) My entertainment is TV, scrapping, and naps. Love those naps, LOL! I started thinking about the holidays that are quickly approaching ~ Thanksgiving, Josh's birthday, and Christmas. Before I know it, I'm going to have to remember to write a new year on my checks! I don't know why that is always a struggle for me, ha! Anyway, in anticipation of the upcoming holidays, here's a recipe for Pumpkin French Toast. (Click the card for a larger image.) What's for dinner?

Gail, this is for you. I promised I would start writing to my blog more often so here we go. It's been about a week since my little surgery (had my gall bladder removed) and wouldn't you know that on about day 5 of my recovery, I caught a cold! Dang it, I can't stop coughing. I want to go back to work, but I think I might need another day or two. The four holes in my belly are healing up pretty well, though, I'm happy to say! Anyway, tonight's dinner - first one I've cooked in over a week - is Dijon Chicken. Here's the recipe if you want to try it. (If you click it, it will get bigger.) I'm going to serve it with biscuits over rice. I love making recipe cards and one of these days I'm going to put a book together for Josh & Cari. Until next time...

Apple Pickin

Scot & I had a fun day yesterday at Oak Glen. It's apple season and we've never been so we got up early and headed out of town. It's about a 90 minute drive and we knew it was going to be a hot day and we wanted to beat the heat as much as possible. It was a fun little mountain town and we visited 3 different orchards. Some had petting zoos, shops and little bakeries or cafes. I bought a few goodies (an apple cookbook-apple crisp will be coming out of my kitchen tonight!) and picked a few apples and then headed home. Great day! Here's a couple of pics Scot took of me ~

I don't know why I love this photo of me & Scot so much; maybe it's because we were so young and had just started our family (Josh is about 8 months old at this time) and the future was wide open. It was the 80s and life was great! So, I scrap this photo over and over because it makes me happy to do it! This time I scrapped it for the Wacom Pen Scrappers contest. To celebrate my new gig, I made a little box template that you can grab here if you want. The template is plain, so you can decorate it any way you'd like. I made mine into an emergency chocolate (LOL!) box and I used the Lady Buggin kit shown here. Isn't it cute! This has been a sad week for digital scrapbooking because it has come to light that some very blatant stealing has occurred from one designer (title is debatable) taking products from an entire store and declaring the products were her own. The store that was supporting the devious behavior was PrettyScrappy.com. I was formerly on the QP team there and had a few posts here on my blog. I have removed every single one of them and destroyed the kits that they provided me with. I am so sad that this ugliness has occurred, but I wanted to bring it to your attention because of the following designer ~ Modern June Creations. MJC is a wonderful designer. She is the one that notified me of this problem and she had no idea that this was happening at Pretty Scrappy. The second that MJC discovered this information, she withdrew her association. I've been making a lot of recipe cards lately and am eventually going to put them in some kind of book form. Haven't quite decided yet how, but that's my long-term plan. On my way home from work today, I stopped at the market and found the first batch of good peaches this summer ~ they smelled so good and I made this card in anticipation of eating them in a variety of ways! Well I haven't posted anything to my blog in such a long time. I have been doing well at work. We're getting down to the end of the school year and the end of my first year in my new job. I have to say that it's been good and I really like it. Say a little prayer for our school district and every other one in the state that California gets its act together and stops cutting school district budgets. Hockey Girls!

Last week we went to the Ducks game. Debbie's daughter, Laura, is a Ducks Girl. They skate and clean the ice and also do PR with the crowd. She looks darn cute in her outfit! I was laughing at the Pond because every square inch of the place is covered in advertising. The Zamboni, sponsored by Rubios, says "powered by fish tacos" on the front and the togo's blimp sprinkles coupons for sandwiches on the crowd. The Ducks were playing the Calgary Flames; the game went to sudden death overtime and the Ducks won! We had a good time!

Cooking Class

Kristie & I took a cooking class yesterday at Prep Kitchen Essentials. There were 16 of us in the class, so we divided into 4 groups and each made a different item. Our group made the Chicken and Mushroom Crepe. Two of the groups made soufflés (one sweet and one savory) and the last group made apple crepes. I made those last night for our dessert. Scot & Cari really liked them. I served ours with a scoop of vanilla bean ice cream ~ de-lish! (My layout is made mostly with Scrap Girls ScrapSimple materials. Here's my newest page in my never-ending scrapping to preserve my kids childhood memories. Josh is 4 and Cari 2 here with Scot. You can tell it's pre-Disney days because Scot still has his mustache. I had a really nice day ~ R&R ~ and on top of that it's a 3-day weekend! I didn't put my photo of the day up yesterday, but I did take it. It's the sign that hangs over the front door and it's the motto that I try to guide myself by. It's a very simple sign, but I really like seeing it every day.

My photo for today is this stained glass bell. It's a Christmas decoration, but I leave it up for as long as I can. My Grandpa Reschke made it and I treasure it.

I also made two layouts today. The first one is Cari feeding the Lorikeets and the second one is Josh and Cari at dinner at PF Changs. Both scrapbook pages are photos taken the day we spent at the Long Beach Aquarium. It was a perfect day!

I make a new desktop layout for my computer each month. Here's the new one ~ I just LOVE it!

And for my daily photo ~ I come home for lunch almost every day and one of my favorite things to make myself is a smoothie. I have a Vita Mix machine (which is awesome and worth every penny if you're a blender junkie like I am) that makes it a snap. I have a standard recipe that I use. First, let me back up a second. I keep my freezer always stocked with frozen fruit. I buy bananas and peel them and break them in half and into the freezer they go. They won't start turning brown for a couple of weeks that way. I buy peaches, strawberries, blueberries and freeze them in ziploc bags. The other two key ingredients are Unsweetened Vanilla Almond Breeze and Yoplait Light Yogurt. Into the blender, one of the banana halfs, 1 c. other frozen fruit, 6 oz. cup Yoplait Light, and 6 oz. Almond Breeze. Blend until smooth ~ it's delish and only 200 calories! Today I had a blueberry smoothie. Give it a try, I think you're going to become a blender junkie!

February Photos

I'm on a roll ~ 3 days, 3 photos! Since February is the month of LOVE, I am going to try to take a picture of something I love (or at least really, really like!)

On Sunday, Feb. 1st, it was the yummy raspberry jam. And even though yesterday was a Monday and I had to go to work, I do really, really like my job. My co-workers are fabulous and I get to help people. It's good! Today's photo is the book I'm currently reading and I can state emphatically that I love to read. This is a new book, so I'll come back in a few days and give my review. I'm very optimistic that it's going to be good!

Project 365

All over the scrap world, people are talking about Project 365. Well, I had every intention of creating my own project, which includes taking a photo every day. Didn't exactly go as planned, but I'm starting again today. So for me it will be more like Project 334 ~ LOL! Here's my summary of January 2009 in lieu of 31 photos! We really enjoyed having Josh here for two weeks. We had postponed our Christmas gift exchange until he got here. And of course, the highlight is the Christmas Eve (Jan. 18th in this case) matching pajamas! Cari & I have pink sock monkeys and Josh & Scot have polar bear pants! We're cute, huh! We had a fun day at Disneyland, visited the LB Aquarium, hit up all (or as many as time permitted) of Josh's favorite restaurants and just hung out and watched Jeopardy! Josh should be a contestant ~ he beats us all by a mile! The time went much too quickly and now he's back in Germany.

And my first photo for February. It's a jar of raspberry jam that Josh gave me for a Christmas gift (three other flavors, too, that will be featured later!) I stirred a teaspoon into my Cream of Wheat for breakfast. Delish!May be a weird thing to photograph, but besides being tasty, it's such a pretty jar. And it's all in German! I love it! Wish me luck as I try to take another photo tomorrow ~ I can do it!

Los Al Junior Baseball ~ 1996

I found these old photos of Josh playing baseball. He's only 14 years old here. Our friend Scott Sharples took the pictures and I recently came across them in my endless search of scrapping material. I think they scanned very nicely! I remember those days hanging out at the baseball field, working in the snack shack (I was VP of chili) and the fun we always had over at that field. I'm thrilled to have such wonderful adult children, but I have to say that I do miss those days. They were fun!

Season of Thanksgiving

Today started a Jessica Sprague class called Stories in Hand and it has me thinking. Do I have stories? I didn't think so, but the more I think about my memories and discover all the gifts in life that I have received, I'm starting to rethink it. Besides the normal, "I have my health", for which I am very grateful, I have so much more. A husband that I love, two of the most wonderful children any woman could ever dream of, great friends, a good job; I'm surprised to say the list of my blessings is quite long. So today I'm going to start writing something new in my journal and begin to record the good things in my life. I have started making a new desktop for my computer each month and for November, the month of Thanksgiving, I begin with my husband - I am thankful for his love and for his fun-loving personality. He has made my "empty nest" days still full of fun. He's a sweet, sweet man and I am thankful for him. The photo was taken during our day at Crystal Cove. The little white flower is a picture I took with my digital macro setting on my camera. There is so much to learn with photography and photo editing software. It will take me so long to learn it all, that I will be busy until I'm 90 and hopefully the learning will keep my brain a little younger for a little longer. That would be something to be really thankful for. Keep your fingers crossed!

In my new job, I work with a brilliant woman named Jenny (rhymes with Penny!) Well come to find out, we were both born in a city on the opposite side of the country in the same hospital! What are the odds? We dressed as Heckle & Jeckle for Halloween at work and I must say we were dang funny! Jenny ~ the brilliant one ~ made our costumes with tshirts, file folders and a black boa (for the feathers!) We passed out the little photo in the corner from Wikipedia for our young co-workers that hadn't heard of the magpie pair!

The Saturday Color Challenge at Scrap Girls was to use pink since October is Breast Cancer Awareness Month. I made this page from an old pic from our trip to Hawaii. Date Night ~ Disney Style

Disney hosted a really big shindig to celebrate employees with 10 and 15 years on the job. Scot hit his 10 years in April. The event was held at the California Adventure Park and began with a nice jazz band in the Sunshine Plaza. We walked the red carpet with some pretty big celebrities (as shown in the layout to the left) and then enjoyed a delicious dinner and fabulous selection of desserts. There also was a variety of chocolate fountains (white, milk & dark varieties) with many things for dipping - my favorite was the rice krispy squares! We had a bunch of fun!

Kristie's Road Trip

Well, Josh left for Germany this morning. We dropped him off at 6:00 a.m. at LAX and he is expected to land in Frankfurt 7:00 a.m. Friday morning (German time). I miss him already. To console myself I opened up the Photoshop and made a layout of Kristie & Kody in the car, heading to the ranch.

I haven't updated my blog at all this week because Josh is here visiting and we are spending all of our time eating and talking - pretty much anything that allows us to maximize the visit. I did make this fun sketch of him with my PS CS3. I used the ScrapGirls Action by Brandy Murry - Sketch It. I love how it looks. I'll be making a page with it soon.

Sweet Baby Girl

A wonderful family had a baby girl this morning and it made me reminisce even more for my little ones. Going through the old pictures always makes me happy. So in honor of babies, I decided to scrap this picture - one of my favorites from Cari's babyhood. She's only 6 months old here. Isn't she cute with her two little front teeth just in!

My Sweet Girl

For today's second challenge at The Sweet Shoppe the teal & black combo was called for. I think it works well with the pics of Cari and her one year of soccer photos. She really loved soccer but she also really loved gymnastics and once she made the competition team at Scats there was no time for other sports. This was a very fun year though and I think she remembers it happily. (I'll scrap a gymnastics page soon to show what she gave it all up for.) I probably have mentioned to you that I have shoe boxes full of old photos which should keep me busy until I'm old(er) and gray(er)! Today I picked another picture from the group from 1985 - this one of Josh. Isn't he so darling! (He still is, too-all grown up man that he is!) Thanks for stopping by and looking.
